The Peso Plan is a system used by Sra. Jalowiec in which all the students are given 100 pesos and as a result of poor behavior (i.e. talking, rudeness, etc.) pesos will be taken away. These pesos are your participation grade in her class out of 100 points. The pesos are eventually given back at the end of the week. Sra. Jalowiec is known to be skilled at taking pesos away from a student without him or her knowing.
